Queso

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 jalapeno pepper, seeded and diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 cup 1934 Bloody Mary Mix to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 1934 Season Mix
  • Tortilla chips for serving

Directions:

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and jalapeno pepper, and cook until they soften, about 5 minutes.
  2. Add the minced garlic to the skillet and cook for an additional minute.
  3. Stir in the drained diced tomatoes with green chilies and cook for 2 minutes.
  4. Pour in the 1934 Bloody Mary Mix and bring the mixture to a simmer.
  5. Gradually add the shredded cheddar cheese to the skillet, stirring constantly until the cheese is melted and the mixture is smooth.
  6. Stir in the milk to thin out the queso to your desired consistency.
  7. Season with 1934 Season Mix to desired taste.
  8. Remove the skillet from the heat and transfer the queso to a serving bowl.
  9. Serve the queso warm with tortilla chips for dipping.
